119029 MAKING SCOTCH EGGS

In successfully completing this unit, the Learner will have

demonstrated the ability to

1place a saucepan of cold water on a hob to boilSummary sheet
2using a spoon, place an egg into the boiling water for at least eight minutesSummary sheet
3refresh the egg in cold running water or in iced water until it is coolSummary sheet
4place sausage meat into a bowlSummary sheet
5add herbs, spices and seasonings of their choice and mix thoroughlySummary sheet
6place the sausage meat between two pieces of clingfilm and roll out it out flat until it is approximately 1cm thickSummary sheet
7lightly flour the eggSummary sheet
8remove the top layer of clingfilm, place the egg on top of the sausage meat and use the bottom layer of clingfilm to wrap the sausage meat evenly around the eggSummary sheet
9prepare three separate bowls, one for breadcrumbs, one for seasoned flour and one for beaten eggSummary sheet
10coat the egg wrapped in sausage meat first in the seasoned flour, then the beaten egg and finally the breadcrumbsSummary sheet
11fry the scotch eggs in oil until golden and finish them off in the oven, cooking them until the sausage meat is cooked throughSummary sheet
